Aluminum favors lower weight and rugged utility, stainless steel favors metal durability and welded construction, and commercial safety vinyl favors comfort, quieter service and cleanable coved installation. The right choice depends on your menu, cleaning method, hot equipment, trailer weight target and local approval requirements.
It is 6:40 on the morning of your first festival. The fryers are heating, boxes are arriving through the rear door and someone has already dropped a cup of rinse water beside the sink. At that moment, the floor is no longer a color sample in a quotation. It is the surface that every employee will stand on, spill on, clean, load and inspect for the next several years.

This conversational guide compares the three common choices without pretending that material alone decides performance. Thickness, alloy or grade, texture, substrate, seams, coving, adhesive, drains and installation quality can matter as much as the top surface. Your local health, building, workplace-safety and fire authorities make the final decision for your market.
Before comparing materials, write the performance brief. A professional mobile-kitchen floor should support safe footing, resist the liquids and soil produced by the menu, remain cleanable at its edges and joints, tolerate equipment loads, and work with the trailer’s underlying structure.
The FDA Food Code 2022—a model code rather than a universal federal building specification—calls for indoor floor surfaces in food-operation areas to be smooth, durable and easily cleanable, and nonabsorbent in moisture-prone areas. It also recognizes antislip coverings used for safety. Where floors are water-flushed, the model calls for drains, grading to drain, and coved, sealed wall-floor junctions. Local adoption varies, so use these principles as a discussion framework, not an automatic approval.
Australia offers a similar performance-based idea. Safe Food Australia’s guidance for Standard 3.2.3 says floors should suit the activity, be effectively cleanable, resist grease, food particles and water, avoid ponding, and reduce places where pests can hide. The guidance specifically applies the floor provisions to mobile food businesses.

A brochure may say “anti-slip,” but traction is a system: floor texture, contamination, slope, cleaning products, wear and shoes all interact. A deeply textured surface can offer grip yet hold grease if the cleaning method cannot reach the profile. A smooth metal surface may clean quickly but become treacherous under oil. The goal is not maximum roughness. It is a cleanable surface that provides appropriate traction in the expected conditions.
The risk is practical, not theoretical. A NIOSH field study involving about 17,000 food-service workers across 226 school districts found that districts given highly rated slip-resistant shoes had a 67% reduction in workers’ compensation claims for slip injuries. That study evaluated footwear, not trailer flooring, so it does not prove one floor material is safest. It does show why the floor, housekeeping and footwear should be planned together.
Ask the flooring supplier for the test method and result for the exact product—not a generic claim for the entire material category. Then confirm which test or classification your destination authority accepts. Ratings such as R-values, pendulum results and coefficients of friction are not interchangeable.
Aluminum tread plate, sometimes called diamond plate or checker plate, is familiar in utility trailers because it is light, corrosion resistant and mechanically robust. The Aluminum Association highlights aluminum’s high strength-to-weight ratio and natural protective oxide layer. Those properties are valuable when the trailer has a tight payload target.
Imagine a compact beverage trailer with undercounter refrigeration, ice bins and a modest hot-food load. Reducing finish weight can leave more capacity for water, stock and equipment. Aluminum can also tolerate the vibration and impact expected in a traveling unit when it is properly supported and fastened.
Choose aluminum because the whole assembly suits the trailer—not because a diamond pattern looks automatically “commercial.” Ask which alloy, thickness, substrate and joining method are proposed.
Stainless steel is associated with commercial kitchens for good reason: suitable grades resist corrosion, tolerate heat and can be fabricated with welded seams. It is especially attractive where operators expect heavy cleaning, greasy cooking or frequent equipment movement.
But stainless steel on a worktable and stainless steel under your feet solve different problems. The FDA’s definition of “easily cleanable” even notes that stainless may be appropriate for food-preparation surfaces without being necessary for floors. A food trailer does not become more compliant merely because every visible surface is stainless.
Stainless steel is often the most convincing choice for a hot, greasy, heavy-duty kitchen—but only when the texture, support, seams and weight are engineered together.
Commercial safety vinyl sheet is not the same as residential peel-and-stick flooring. A food-service product is selected for wear, moisture resistance, cleanability and slip performance, then installed over a stable substrate with compatible adhesive, heat-welded seams where required, and supported coving at the walls.
For coffee, bakery, dessert, cold-food and moderate-duty kitchens, vinyl can create a quieter, warmer and slightly more forgiving floor underfoot. It also offers color choices that make a compact interior feel less industrial.
An Australian council’s mobile food vehicle construction guidance gives a useful installation example: it calls for impervious, non-slip, crack-free floors and describes heavy-duty vinyl with welded joints over a solid base. It also shows vinyl turned up to form supported coving where applicable. That is one local example, not a global dimensional rule.

Sometimes. A buyer may want a comfortable commercial safety floor through the main work aisle but a compatible heat- and impact-resistant detail beneath specific equipment. Another design may use one continuous metal floor throughout, then add removable, easily cleanable anti-fatigue mats in dry standing zones.
The danger is creating a patchwork of raised transitions and unsealed edges. Every material change needs a cleanable, waterproof and trip-conscious detail. If the local reviewer expects one continuous finish or has specific hot-line rules, confirm that before fabrication.
Think about the last five centimeters beside the cabinet—not the middle of the floor. Water, flour, sugar and grease migrate toward edges. A sharp 90-degree corner is awkward to scrub. An unsupported strip of vinyl can crack. A cover trim placed over an open gap may hide rather than solve the problem.
That is why mobile-catering guidance often emphasizes smooth, impervious floors, sealed edges and rounded junctions. Braintree District Council’s current advice, for example, says mobile-unit floors should be non-slip, waterproof, without joints, sealed at the edges and rounded for easier cleaning.

The visible surface is only the top layer. Under it may be metal framing, insulation, structural sheet, adhesive, waterproofing or a composite panel. The floor assembly must handle road vibration, concentrated loads, temperature changes and water from above without trapping damage below.
Flooring also interacts with the complete food trailer interior layout. A narrow aisle concentrates foot traffic; a fryer beside the door increases oil migration; and a sink placed across the aisle creates a wetter walking route.

Do not approve “anti-slip floor included” as the complete description. Put enough information in the quotation and finish schedule that the buyer, manufacturer and reviewer are discussing the same assembly.

Follow the exact flooring manufacturer’s instructions and the sanitizer or degreaser label. More chemical is not automatically more effective. Incorrect concentration, dwell time or rinsing can damage finishes and leave a slippery residue.

Then look past the material name. Verify the texture, substrate, thickness, seams, coving, thresholds, penetrations, cleaning chemicals, product test data and local acceptance. The best floor is the one that still works after the first thousand spills—not the one that looked best in the sample book.
